it's cliched to say homemade foods are the best. and with something as simple as pho, how restaurants can't duplicate homemade quality is atrocious. cook bones for a long time. use fresh ingredients. and voila. but that just never seems to be the case. and so for two days i watched sun prepare pho in the kitchen. tediously fiddling over specific measurements continually double checking her mother in laws recipe and yet simultaneously cooking side dishes to be eaten immediately and having a full conversation with me. maternal instincts to the max.
pho does not need a hangover to taste delicious.
chicken, onions, ginger, salt, fish sauce. rock sugar, coriander seeds, cloves, star anise, cinammon
