noodles are a religion...get on board

i'm telling you...in jakarta...noodles are a religion.  i thought it was just my family until i saw this site...top 50 bakmi places in jakarta.  you wake up on saturday to have noodles.  no traffic.  less people on the street.  douse your noodles with chili.  swat the flies away from the table.  grab the roll of toilet paper on the table to wipe the heat sweats off your forehead.  u order "aqua satu lagi"  rinse out your straw...take a sip...add more chili to your noodles and slurp down the rest of the bowl.  you always seemingly want another bowl.  but experience tells you to refrain.  because...there's always some snack or dessert around the corner you're going to "share"

why are the noodles just so much better?  the noodles in indonesia have more bite.  some curly...some straight.  handmade flour noodles.  flavored with a pork mince and pork fat.  and some soy?? and some chilis?? shallots...fried shallots?  and maybe some wontons?  whatever it is...it's more tasty.  sweeter?  saltier?  more savory?? i don't know why.  it's amazing.
