mexican food is amazing!!!
i don't like mexican food. but everything i put in my mouth in mexico was utterly phenomenal. perfect bites of food every random restaurant we ate at. every wedding event, every hotel meal, every hors d'oeuvre i picked up was a blast of well balanced island umami. the corn tortilla finally made sense. i always wondered what was the point of a thick hard corn tortilla for tacos. not to mention the double tortilla taco joints. but in mexico...u can taste the rich corn flavor, the tortilla's aren't stiff and they don't get soppy soaking up just enough flavor (not grease) from the filling because they don't over stuff the taco! well portioned duck, fish, pork. with light dollops of sour cream and chili and guac....making a sensible and sizeable bite. flabbergasted by how big of a difference real mexican flavors are compared to whatever i've had in the past. i've never liked ceviche...it never tasted that fresh, nor flavorful. but the mexican ceviche on the beach? so fresh, so tasty, so perfect. i basically didn't even know what was going on...and couldn't stop eating to the point i had to question...."i only ate four taco's....why is it so filling? why am i so full???" and proceeded to reach for another one.
